Inspired by watching the movie Chocolat on the plane, I made a Raw Chocolate Lemon Cheezecake this morning, a take on one of Polek and my wedding cakes, recipe from Sarinda Hoilet. Here is the modified recipe:
Crust (The crust of the original recipe was made with macadamia nuts, dates and coconut. But I just used what I had in the house ...)
Blend in food processor:
1 c dates
1c almond flour (I save in the freezer the strained almond grinds from when I make almond mylk.)
1/2 c ground flax
1/2 c Coconut Butter
dash pink salt
Press into glass tray
Pour half mixture over crust, then add:
1 c raw cacao powder
Swirl cacao mixture into cake.
Set about an hour in the freezer, and serve in love!
